Ingredients
- 1 scoop of vanilla protein powder (I used Optimum Nutrition Gold Standard 100% Natural Whey)
- 1.5-2 tbsp of plain greek yogurt (this was about 30 g)
- 1 tbsp coconut flour
- 1/3 cup almond milk (I used unsweetened vanilla, coconut milk also works)
- Lemon juice to taste or approx 1 tbsp (you can also use juice from a real lemon!)
- 1 tsp baking powder
- 1 packet of stevia (liquid stevia also works)
Icing/Topping Ingredients:
- 2 tbsp plain greek yogurt (45g)
- 1/2 tbsp lemon juice
- Stevia to taste (optional)
- 1/4 cup Coconut flakes (unsweetened preferable)
Instructions
- Mix all the ingredients in a bowl or blend in a small blender (like a nutribullet) and place in a mug
- Microwave for 1:30-2 mins depending on how powerful your microwave is. The cake will begin to rise so watch that it does not overflow!
- While you are letting the mug cake cool down, make your icing. Mix the yogurt and lemon juice so it thins the yogurt out. Once it becomes like a "sauce" it is good. Adding some more stevia is optional.
- Turn your mug upside and place cake onto a dish
- Top your lemon cake with the yogurt icing and coconut flakes & enjoy!
