In a large bowl mix:
- 1 can of pure pumpkin (that's the only ingredient in the can!)
- 2 scoops of protein powder - I use Trutein Cinnabun or Pumpkin Pie flavor, since they taste the best out of any protein I have used. I am sure any brand of vanilla or cinnabun protein powder would be just fine. 2 scoops of Trutein gives you 48 g of protein and 1 g of Fat!
- 1 egg
- approx. 2 tbsp of almond milk (I use unsweetened)
- approx. 3 tbsp cinnamon
- 2 tbsp vanilla extract
I take it out of the bowl and top this with homemade vanilla "frosting" once it has cooled slightly:
- 1/2 greek yogurt or coconut/almond milk yogurt if you are strict paleo
- 1 packet of stevia
- 1/2-1 scoop protein powder (Trutein Cinnabun works really well, as it tastes delicious with yogurt)
- Some almond milk or water to get the right consistency. Otherwise it will be like paste. Try adding a little at a time until it is to your liking.
