Kale is a vegetable I make sure I eat at least once a day, and I love it in my salads. It is very high in calcium, iron, fiber, and antioxidant vitamins A, C, and K. It also supplies one of the highest amounts of vitamin K, a total of 684% in 1 cup of chopped kale. Eating a diet rich in the powerful antioxidant vitamin K can reduce the overall risk of developing or dying from cancer, according to a study in the American Journal of Clinical Nutrition, and is important for bone health and normal blood clotting.
Anyways, the result of this salad was so delicious I had to share this creation with you all immediately! Here is my recipe for Turkey and Kale Bruschetta salad.
Ingredients
- Pre-cooked lean ground turkey
- 2 medium tomatoes
- 1 gala apple
- 1/4 cup finely chopped red onion
- 1 cup (or as much as desired) chopped organic kale
- Black pitted olives (as much as desired, I used 1/2 the can)
- Half a lemon, juiced
- 1 tablespoon avocado oil (extra virgin olive oil also works well)
- Balsamic vinegar
- Sea salt & ground pepper
- Dried thyme and basil
Directions
2. Add lemon juice and seasonings to your desired taste
3. Mix well
4. In a different bowl (the one you will eat from) add chopped kale and ground turkey
5. Add chopped veggies from other bowl on top of the kale and turkey
6. Top with avocado oil and balsamic vinegar, adding extra basil if you desire and toss
Enjoy your salad!
Additional toppings/ingredient ideas can be chopped pecans, fresh basil, chicken instead of turkey, and fresh chopped garlic. Salads are great because you can always customize it to your taste buds without messing up the recipe!
