I got creative in my kitchen today and made a delicious and easy chicken salad using a florida avocado instead of mayo that makes it Paleo approved and free of soybean oil, preservatives and sugar! Avocado is an amazing mayo substitute and works for canned tuna or salmon as well!
Ingredients to make 1 serving:
- 2 pieces of grilled chicken breast
- 1/3 of a Florida avocado or 1/2 Hass avocado
- 2 Tbsp Extra Virgin Olive Oil
- Fresh Basil, about 2 leaves, or dried basil if none available
- Fresh Parsley, as much as desired with stems removed
- Fresh ground pepper
- Celtic Sea Salt
- Lemon Juice (100% REAL lemon juice or juice from an actual lemon)
- Hot Sauce
In food processor or magic bullet, add avocado pieces chopped into cubes and scooped out with a spoon, like so:
- Next add the olive oil, basil, parsley, pepper, and sea salt.
- Blend into a bright green mixture!
- Then I chopped/shredded my premade grilled chicken breast and added it to the mix and pulsed to mixed the chicken with the avocado. You might need to open the lid and mix the chicken around to get an even distribution and continue to blend.
- Then I plated baby arugula in a bowl, added my avocado chicken salad, and garnished with some cherry tomatoes.
- Lastly, whisk together some lemon juice and a few shakes of hot sauce and drizzled over your salad. Devour!
