Here is my recipe for Paleo Turkey Burgers:
- 2 lbs of 99% fat free ground Turkey
- 1/4 cup chopped red onion
- 2 huge handfuls of spinach, chopped
- 1 clove fresh garlic, finely diced
- Sea salt, pepper, dried basil, dried oregano
- 4 portabella mushroom caps
- olive or coconut oil
2. Form into patties, any size you want, depending on how many you want to make
3. Cook the turkey burgers, flipping back and forth until you are sure all the pink in the middle is gone. I use a grill pan too cook my burgers, but you can also broil them in the oven if you'd like
4. Once turkey burgers are cooked, use a brush and lightly coat the portabella caps with melted coconut oil or olive oil and grill on both sides
As an aside for all my non-paleo visitors who eat dairy, feta cheese works well in these burgers.
I also prepared enough for my boyfriend and I had lunch for tomorrow. Leftovers are super important for meals throughout the week, so make sure if you are already going to make a mess in the kitchen to make enough food then to save time cleaning up later!
