Ingredients
- 1 cup coconut flour (I bet you could sub almond flour as well)
- 1/3 cup hazelnut flour
- 1 cup coconut sugar
- 1 tablespoon pumpkin pie spice
- 3/4 cup pumpkin puree from a can
- 1/2 coconut oil, melted
- 1 egg
- 1 teaspoon vanilla extract
These make about 12 bars
Instructions
- Preheat oven to 350 degrees F
- Grease an 8x8 baking dish with coconut oil, butter, or spray
- Mix all dry ingredients together in a large bowl until evenly combined
- Add the wet ingredients to dry ingredients and mix well until well combined
- Pour mixture into baking dish (I had to pack my batter down to make sure it covered the dish evenly)
- Bake for 25 minutes or until a toothpick comes out clean
- Make sure you let the pumpkin bars cool for at least 5 minutes before you begin to devour them
FYI, these taste really good with some Trader Joe's pumpkin butter on top! That for those of you who are REALLY craving something sweet.
