I went to Costco and bought a 5 lb flat cut brisket. Cooking times will vary according to how much your brisket weights, but for me I used the 1.5 hours per pound method for a total of 7.5 hours and it came out perfect. This is based off of cooking it at a low 250 degrees, the right way to cook your brisket and ensure it does not come out tough and chewy. It is worth it to let it slow cook than to save a few hours of cooking time.
You can trim the brisket if you like, but I did not as there was not much fat to be trimmed from my flat cut.
Ingredients
- One beef brisket - I used a 5 lb flat cut but you can buy a spilt brisket cut lengthwise which is both the flat end (leaner end) and the point end (fattier end) if you'd rather get both types of meat
- 2 tbsp Black pepper
- 1 tsp Salt
- 1 tsp Smoked Paprika
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Dry Mustard
- 1 tsp Cayenne Pepper for you spicy food lovers like myself
Directions
- Preheat oven to 250 degrees F
- Make your dry rub with the spices listed above
- Season the brisket on both sides evenly with your rub
- Place on rack in a roasting pan fat side up on cooking rack and cover tightly with foil. You do not need to base or touch your brisket after this point, just let it roast for the next 7.5 hours
- After 7.5 hours, uncover from foil and let it bake for another 45 mins-1 hour
- Remove from oven and let it REST uncovered for 30-45 mins before slicing across the grain into thin slices and devouring
Pair your brisket with some oven roasted veggies and you have yourself a fantastic meal. I love crispy brussels sprouts or asparagus. I just put them in a roasting pan at 400 degrees for ~20 mins after tossing them in olive oil, salt, and black pepper. Again, super easy and yummy.
